Revisiting Carla Nappi’s “Translating Recipes 1: Narrating Qing Bodies”

I study and write about the history of science and medicine in early modern Eurasia, with a focus on China in that context. In particular, I’m interested in how medical and culinary recipes were translated in the Ming (1368-1644) and Qing (1644-1911) dynasties, and how the recipe format became a medium of epistemic exchange across early modern Eurasia.

A text that has been particularly exercising me lately is the Xiyang yaoshu 西洋藥書 [Handbook of Western Drugs]. It was written by two French Jesuits, Joachim Bouvet (1656 – 1730) and Jean-François Gerbillon (1654-1707), some time after they had arrived at the court of the Kangxi Emperor in 1688. The book itself was smaller than a modern passport. It begins with a series of thirty-six recipes for treating myriad illnesses, many of which were broken down into varieties on a common theme. After this, the text opens out into almost forty further discussions of drugs and illnesses, many roughly translated from European-language texts about health and the body.

Importantly, the text was written in a language called Manchu, one of the official languages of the Qing court and a crucial medium of translation of scientific and medical knowledge during the Kangxi Emperor’s reign. Many of the recipes used the Manchu script to transliterate the names for drugs in Chinese, French, Latin, and other languages. The text contains many recipes for making remedies for poisons of all kinds.

Reading through this text, I began to think deeply about these recipes as literary objects. What if we understand a recipe not just as a kind of text, but also as a form of storytelling? If a recipe does tell a story, what kind of story might that be? And how might understanding recipes in this way change the way we read and experience them?

Thus began the Qing Bodies project, a long-term multi-media foray into considering various forms of scientific and medical writing in the Qing period from the perspective of a history of storytelling. Qing Bodies asks a very simple, but potentially transformative, question: how might reading Qing medical and scientific texts with an eye to narrative form open up creative possibilities for working and writing with the history of Eurasian science and medicine? This has been tremendous fun, to put it mildly!

One recent experiment stemming from this project (and inspired by the work of Raymond Queneau) has led to me thinking about the relationship between recipes and drama. Can we map a recipe onto–for example–a traditional three-act dramatic form? And how might that change how we experience recipes as literature?

If Act I of the recipe introduces the protagonist (or protagonists), sets out the conflict, and presents the incident that will set the ensuing events in motion, Act II introduces an obstacle for the main character and brings the protagonist to a moment of crisis. Act III resolves the crisis. Here, the recipe becomes a story involving characters (drugs, a body in crisis) that are transformed through their interactions in time.

Banishing the Armpit Goats: Body Odor in Ancient Rome

“Remember that night in 1933, Ed Snootz came to the Club Dance with that cave-man aroma? … Just let a man forget himself for one evening and come to a party with a slight case of perspiration fumes and his name is Mr. Goat.” This selection from a 1939 advertisement for Mum—the first commercially available deodorant—reprimanded the fictional Snootz for his body odor.

Many early deodorant advertisements actively shamed consumers into purchasing their product. Men and women were told that if they did not wear a deodorant it would lead to other failures: in love, friendship, and business. In the case of “Mr. Goat” his faux pas was so egregious that women were talking about it 6 years later.

As I write this from the comfort of my airconditioned office, the outside temperature is 90°F. The moment I venture outside, my body will begin to perspire in order to regulate its temperature. One unpleasant side effect of this perspiration is underarm odor. No need to worry, however, because in the 21stcentury, we have a vast array of deodorants and antiperspirants created to banish body odor.

A commonly held refrain about deodorant use is that because of these scolding advertisements consumers were duped into buying a product to hide perspiration and the accompanying offensive odor. While this is not entirely untrue, it is not the whole story. Mum deodorant was not the first—or even the hundredth—attempt to tone down the “cave-man aroma” described by the ad. As long as people have existed, they have worried about their appearance and smell. While the custom of wearing a commercially produced deodorant is rather new—about 130 years—attempting to combat fetid odor is as old as mankind.

The Romans particularly worried about foul body odor and worked fastidiously to keep their bodies clean and smelling pleasant. Just as the Mum advertisement shamed Ed Snootz for his lack of deodorant use, Roman playwrights and poets rebuked and joked about malodorous men and women. This can be seen –and smelled—in an epigram by Catullus:

Rufus, you are being hurt by an ugly rumor which asserts

that beneath your armpits dwells a ferocious goat.

This the women fear, and no wonder; for it’s a right rank

beast that no pretty girl will go to bed with.

So either get rid of this painful affront to the nostrils

or cease to wonder why the ladies flee. (Carmina 69)

Rufus—much like his 20th-century counterpart Mr. Snootz—had failed to practice proper hygiene and as a result could not find a female companion. Throughout Roman texts, foul body odor was described as goaty (hircus) and connotatively undesirable. Roman citizens took pride in their appearance and viewed their perceived cleanliness as a mark of superiority over other civilizations.

Pseudolous: It befits the fellow, then, to have a tunic with long sleeves (2.4.46-49)

Much in the same way that 20th-century deodorant advertisements sought to correct a behavior, Roman prose and poems—such as those by Catullas and Plautus—used satire to poke fun at foul odors, but also as a way to educate and encourage cleanliness. Ovid, in The Art of Love, cautioned readers against offensive underarm odor, writing “I warn you that no rude goat find its way beneath your arms” (3.193). Ovid continued by recommending removing underarm hair and using powders to keep the body free from odor.

The Romans had countless remedies for dealing with perspiration odor. For example, In Natural History,Plinyrecorded a number of solutions for dealing with goats under the armpits. One method for combating body odor was a combination of rue, aloe, and rose oil boiled together and then dabbed on the offending areas (20.51). Another—slightly more fitting—recipe was a concoction made from the ashes of goats’ horns mixed with oil of myrtle, and then rubbed all over the body (28.79). While these solutions might not have checked perspiration, the scented oils would have helped mask the goaty odor.

Most significantly, when it comes to halting foul odors in the 21stcentury, the Romans recorded some of the earliest instances of applying alumen—the main ingredient in many antiperspirants today—as a deodorizer. Roman recipes for alumen as a preparation for halting armpit odor range from, bathing in a mixture of two parts honey and one part alumen, to placing unadulterated alumen stones in the armpits until the odor disappeared (35:52).

For over 2000 years, foul body odor has been a topic of conversation, a location for shame, and a way to assert superiority. Whether in ancient Rome or the present-day United States, dealing with goaty armpits has been a priority for many men and women. If you wear an antiperspirant, next time you apply it, you can thank the Romans.

The Senses of the Apothecary in Early Modern Italy

The making of remedies today, especially industrial pharmaceuticals, relies very little the human senses, or at least this is how we imagine it. Industrial pharmaceutical recipes, we believe, are and should be impersonal and completely based on impartial measurements and detached formulas. Most of us believe that detaching the science and technology of medicine and pharmacy from everything that is subjective – let alone bodily –leads to progress. Things, we know, have not always been like they are today. How did early modern apothecaries understand their craft and knowledge? How did apothecaries relate to the substances they handled? How important was theory in the process of making remedies, and how important were experience and the senses?

One of the most insightful answers on how early modern apothecaries understood their craft comes to us from Filippo Pastarino, a sixteenth-century, well-established apothecary active in Italy, in the city of Bologna. In 1575, Pastarino published ‘A Reasoning of Pastarino on the Art of Apothecary’ (Ragionamento di Pastarino sull’arte della speciaria).[1] In this short booklet he sought to present apothecaries to his fellow citizen in an effort to reestablish their social role within the city, at a time when they felt their position was threatened. Apothecaries Pastarino claimed were first and foremost artisans with a strong religious vocation. They were experts in materia medica (all the substances apt to make remedies) who acted as merciful caregivers.  I have discussed at length the identity of early modern apothecaries in the article Craft, Money and Mercy, an apothecary’s selfportrait in sixteenth-century Bologna.[2] Here, we can delve in this work to answer to the question of how was apothecaries’ expertise achieved and enacted daily, according to themselves.

A good Apothecary knows about substances (substantie), so to say, by their taste, smell, and color not only with his intellect, but with his whole person: smelling, tasting, and touching he can perceive solidity, liquidity, density, lightness, roughness, softness, and such other qualities of touch. Also bitterness, sweetness, ripeness, acidity, sharpness, salinity, the heaviness and other flavors, which I here omit to mention, and bad flavors, such as rancid, burnt, putrid.[3] Apparently, to Pastarino touch, smell, and taste came before sight. He knew substances through ‘his whole person.’ Similarly, when a judge questioned another Bolognese apothecary about how he was able to recognize a good compound, the apothecary’s answer left no room for theory: “A good Theriac [the most prestigious compound in the early modern period and beyond] can be recognized by its smell, color, taste, and its by body or consistency.” The consistency of substances was substantial to apothecaries.

Apothecaries relied on all five senses in their relationship to matter. Daily, apothecaries manipulated hundreds of substances with dozens of different procedures, which could go wrong producing unwanted, and unpleasant, outcomes. The scope of the physical sensations described in these two passages evokes in us a range of physical experiences that go beyond today’s everyday experience of cooking or taking care of a house. But we can imagine that even today artists and artisans who produce artifacts from natural substances (like lute makers or ceramists, but also cooks) must have a deeply embodied sensibility for materials. Apothecaries drew from their daily and constant relationship with matter; they “knew” through their bodies and their senses. But, what about their intellect and theoretical knowledge?

Traditionally, early modern society valued theory and knowledge above practical expertise. Artisanal knowledge, or the mechanical arts, was essential for the functioning and well-being of the society but it had less prestige than the liberal arts. Pastarino was quite original in claiming an opposite balance between mind and body knowledge: “The sum of perfection in an Apothecary, besides knowledge, is vast experience, the mistress of all the arts that can be learnt and that can be put into practice. This is (in my opinion) the best, and most reliable method we can learn […] I say that experience […] is the true method of an apothecary; however, to their perfection, they also have knowledge”. [4] In Pastarino’s treatise, the value and importance given to bodily artisanal expertise stands out as a statement overturning the consolidated conception of knowledge (scientia) being seen as superior to experientia, at least in regard to the apothecary art.

Pastarino was certainly original in his views, but he was not alone. Historian of science Pamela Smith has shown that many early modern artisans shared a bodily awareness of their own art.[5] From the fifteenth century onward, artisans expressed such awareness and expertise not only in their writings, which were both technical and autobiographical, but also in paintings, drawings, statues, jewels, furniture, swords, and guns.[6] Artisanal practice did not merely consist of applying formulas and automatic gestures, but required a high degree of reflection and thinking. Like Pastarino, many other artisans blended the knowledge coming from theory and the expertise coming from embodied knowledge. They knew that a complete knowledge came only combining mind and body: “Those who see usual things only with the eyes of the intellect, those who cannot understand and accomplish them with their corporal hands, appear to live in darkness and misery”.[7] In a way, this view seems opposite to the modern idea that perfect knowledge should be voided of all subjectivity. And yet, sometimes this artisanal view seems to have the seeds of a wisdom which could help us (and the planet) progress even more.
